Saffron risotto Milanese with tomato, eggplant and zucchini caponata, aged parmesan and a parsley and lemon gremolata (v. vgo, gf)

Pan-seared barramundi with zucchini, dill and feta fritters, sweetcorn puree, peperonata, parsley and "Mt Zero" lemon oil
